Mac and Cheese Cuppies

Ok, now obviously (or not obviously) I like everything I cook, because, well, I’m the one cooking it and I know what I like! I was grocery shopping and came across these won-ton wrappers. I picked them up and asked myself what I could make with them. Then it hit me like a palm tree, MAC AND CHEESE CUPS!

I started out by cooking gluten free pasta. Easy and done. Set it aside. Next, you need to make a cheese sauce. I used muenster, parmesian, and mozzarella. Note: I don’t suggest using mozz because it melts into a big string clump which is delicious, but not what we’re looking for in this dish.

For the sauce, pour some cream or milk into a small saucepan. Probably half a cup to a cup will do depending on how much you’re making. Keep in mind you can always add more liquid if need be! Put it on low heat and add your cheeses after the liquids are a bit warm. From here, go crazy adding any seasonings you’d like. I wanted mine to be a bit spicy so I added some cajun seasoning, crushed red pepper flakes, and some garlic. Stir it until saucy. Add to your pasta.

Preheat the oven to about 400. Spritz a cupcake pan with some no-stick spray and put in the won-ton wrappers. Spoon in the mac, sprinkle with breadcrumbs, and stick it in the oven until the edges of the wrappers start to turn golden.

Switch it up! Instead of a sauce, mix in shredded mozzarella with tomato and basil to make a margarita cup! If you’re craving a little something different, go with some sauteed veggies and sausage! This dish is what you make it, be creative and use ingredients that you like!
